There's something genuinely very wild and chaotic about Eponine that he generally doesn't see in mortals. It speaks to him, and he's got an apparent weak point for women that are very forceful to begin with. He's also kind of got this fixation for the fact that mortals can tell their own stories, and he's latched onto the concept with her especially. He wants to see what she does with herself and will meddle where he thinks it's necessary so she can keep working on her tale.

She's also a pretty French girl, and calls him out on his shit without hesitation. He kinda likes it because he's not threatened by her, and the sheer audacity is something he really enjoys. Also, she drinks like a pro and enjoys raising hell. What's not to like?
