Because she's scary. Like legitimately scary, and he can't entirely parse why. Originally, he thought maybe she was some kind of badass, but he's fairly sure now that she's a normal mortal woman from Midgard that just happens to be unusually strong willed.
And she's still scary.
He actually responds really well to strong women. It's hilarious because he used to be this raging misogynistic douchebag and he still has some of that in him, but he's eased out of it some since he's gotten into this child form. And, yeah, admittedly plenty of how he acts with Bianca is just for show. He knows that her positive regard could net him a lot of advantage in certain areas because he's seen how she interacts with the community at large.
But really, she spooks him because she just suddenly (but not blindly) took an interest in him. He's not going too far out of his way to fool her or anything. She's gone to bat for him in situations that benefit her in no way whatsoever. He's not accustomed to people knowing approximately just what he is and actually liking him anyway.
